Spread clarified butter on both sides of banana leaves and slightly roast the leaves on both sides until light golden brown. Set aside.
In a mixing bowl, make a a dough with rice flour, salt and water.
In a separate bowl, mix grated coconut, sugar and cardamom powder. Stir well and set aside.
Spread a bit of oil on one side of prepared banana leaf. Place a lemon-sized ball of dough on it. Press it gently to flatten then spread with coconut mixture.
Fold the leaf gently and repeat this with the rest of the dough.
Steam the leaves until dough is cooked.

Ada is a specialty of the Indian state of Kerela and is usually eaten for breakfast prepared with rice flour and grated coconut. It is served wrapped in fresh banana leaves and makes a very appealing presentation.
