  • anchovy fillet
  • garlic
  • olive oil
  • Vegetables:
  • carrots
  • tomatoes
  • celery
  • zucchini
  • fennel
  • fava bean
  • small artichokes
  • green onions
  • Herbs:
  • basil
  • thyme
  • lemon
  • tarragon
  • mint
  • Salad:
  • purslane
  • mesclun (chervil, arugula, leafy lettuces and endive in equal proportions)
  • arugula
  • TREVICE
  • endive
Preparation Instructions

Peel the vegetables and cut into fine, small strips.

Cook for 2 minutes in boiling water.

Mix the herbs and salads.

Place on a serving dish with the previously cooked vegetables. Season with the anchoiade.

Anchovis with Herbs and Salads

A southern French sauce made from anchovies, garlic and olive oil, often served on toast or with raw vegetables. Ancho?ade, a garlic and anchovy dip, is a specialty from Provence and the city of Collioure in particular, famous for its anchois. It is typically served with an assortment of raw vegetables, or spread on little toasts.

 

Traditional recipes call for anchovies packed in salt, they are somewhat difficult to come by, anchovies packed in oil are much easier to find. This recipe here features: spring leeks and spring garlic (delicious, and almost undistinguishable from each other except for the shape of their base, straight for the leek and rounded for the garlic), sticks of young zucchini (raw zucchini is way underrated -- stick to small ones and you'll see here), raw fennel, pink radishes and plum tomatoes. The choice of veggies provides a nice variety of tastes (sweet, aniseedy, sharp, peppery) to match the salty smooth ancho?ade.

This dish is really delicious! I always making salads and this is a great idea that I can put some anchovies in my salad. The taste is really good the combination is perfect! You can taste the anchovies perfectly My husband will love this for sure because he loves making dishes with anchovies.

All I have ever loved about this recipe video and the recipe itself is the flexibility and the mixes of all flavors! It was meshed rather ideally that you can feel the aftertaste. Just flawless, it was rather easy too! Just 4 traditional steps and what do you know, you already have a dish perfect for a date!

I should like this recipe but the salad doesn’t look appetizing it looks like a dirty dish. They should add some sauce to make it more appetizing.In addition, they should plate it more delicious.

I found out this recipe is just quiet good because it’s healthy but not tasty. Maybe I just prefer creamier Caesar dressings, for the dressing of it is not so creamy which is what I always look into salads!

It looks like i made it when i was young. The recipe looks like children use to play on the backyard when leaves are there main ingredients. It may taste great for some but sorry to say i don't like this recipe so much. I shouldn't review this but it makes me back to the days i use to play on our backyard. Anyhow, my suggestion is improve the presentation and recipe.

This is just great! I've been searching for new recipes using Anchovis. I tried to do the same plating but it did not come out like this. It tastes good, though. I will surely make this again.

This is so excellent! I can't imagine that it will turn out to be so excellent on this kind of recipe. The great combination of the anchovies has a big kick in herbs that matches with salad. Not only that the highlighted dessert is so terrific!. It is so easy to prepare and cook.

The sauce of this recipe is just the right portion. With the infused olive oil, garlic and anchovies’ together they create a unique taste. The accoutrements, like raw vegetable are a good snack for vegetarians and health buffs alike while the assortment of toast spread on the plate is an exciting view for active kids! And the basil and the lemon give a sour yet sweet and salty finish!

This recipe is good for health buffs! The basil blended perfectly with the anchoiade. The overall taste is somewhat sweet and sour and a little salty that makes you eat on and on without the thought of adding weight. And the steps are just easy to follow that you can do it for not more than the recommended time. All the veggies combined together and the creative presentation of the food really adds up for the appetizing effect of the food! All in all, this recipe is a must have in every kitchen!

Very simple, yet delicious salad! I use the dressing on all sorts of salads - I like anchovies. Even if you do not like anchovies, you may like this because they are blended into the dressing. The acidity of the lemon juice balances the anchovies' saltiness. What I also admire is that it has more veggies that can make the salad more nutritious and tastier in its appearance. Good job guys!
