Ingredients
  • 1 ½ cups firmly packed brown sugar
  • ½ cup butter, softened
  • ¼ cup milk
  • 1 tablespoon freshly squeezed lemon juice
  • 1 teaspoon freshly grated lemon peel
  • 1 egg
  • 1 ½ cups all purpose flour
  • 1 cup whole wheat flour
  • 1 teaspoon baking soda
  • 1 teaspoon nutmeg or cinnamon
  • ¼ teaspoon salt
  • 1 ½ cups finely chopped apple
  • 1 cup granola
  • For the Glaze:
  • ¾ cup confectioner’s sugar
  • 2 to 3 teaspoons freshly squeezed lemon juice
Preparation Instructions

1

Preheat the oven to 375 degrees F.

2

In the bowl of a mixer, cream together the butter and brown sugar. Add the milk, 1 tablespoon lemon juice, lemon peel, and egg. Stir well to blend. Add the all purpose and whole wheat flour, baking soda, spice, and salt. Stir well to blend. Fold in the apples and granola.

3

Drop this dough by heaping teaspoonfuls 2 in. apart on a cookie sheet. Bake for 9 to 13 min., or until golden. Remove cookies to a wire rack to cool completely.

4

In the meantime, stir together the confectioner’s sugar and enough lemon juice so the mixture drizzles easily. Once the cookies are cool, drizzle the glaze over them. Allow the glaze to completely dry before storing or stacking the cookies.
