Ingredients
  • 3 tablespoons oil
  • 1 medium eggplant, sliced thin
  • 1 large sweet red bell pepper, chopped
  • 6 pita breads
  • 1 1/2 cups pre-made spaghetti sauce
  • 3 oz. pepperoni
  • 1 onion, chopped
Preparation Instructions

In a saucepan, heat the oil over medium.

Add the eggplant slices; cook until golden brown.

Using tongs, remove the eggplant and drain on paper towels.

Add the red pepper and saute until tender-crisp. Drain on paper towels.

Separate the pita breads and arrange on a baking tray.

On the separated pita bread, evenly spread the spaghetti sauce.

Over this, lay the eggplant, red pepper, pepperoni, and onion slices.

Bake in a 350 degree F. preheated oven for about 5 minutes.

Serve hot or cold.
