2 lbs. skinned haddock fillets
2 teaspoons fresh lemon juice
Freshly ground pepper
6 slices of bacon
½ cup soft bread crumbs
2 tablespoons chopped fresh parsley
¾ cup thinly sliced onion
2 tablespoons bacon fat
Preheat the oven to 350 degrees F. Grease a 12 x 8 x 2 in. baking dish.
Place the fish fillets in the prepared baking dish. Sprinkle with lemon juice and season with salt and pepper.
Fry the bacon in a skillet. Remove, and allow it to drain on paper towels. Crumble the bacon into a bowl and add bread crumbs and parsley.
Cook the onion in the bacon fat until soft. Lay the slices over the fish. Sprinkle the bread crumb mixture over the fish.
Bake until the fish flakes with a fork, about 25 to 30 minutes.
