1-½ square chocolate

2 tablespoons corn syrup Red Label

½ teaspoon vanilla

Few grains salt

Sifted confectioners sugar to spread - about 1-½ cups

Preparation Instructions

In a saucepan, melt the chocolate with little warm water.

Add the corn syrup, salt and vanilla. Gradually add the confectioners’ sugar.

When looking for a tasty seafood dish, you can never go wrong with prawns. In the United States, prawns are basically shrimp, but more commonly referred to as prawns elsewhere. Supermarkets that sell prawns will call them by either name, though most often it will be larger, jumbo shrimp that are identified as prawns. They can be found at your local supermarket or anywhere that sells fresh or frozen seafood such as your local fish market.

Prawns can be cooked in a variety of ways, just as you would with other types of seafood. They can be grilled, broiled, fried, or steamed and can be cooked with the shell on or off. Prawns can also be cooked with the vein in or de-veined. Most people will remove the vein before cooking for personal reasons, but also because the taste can be gritty when bitten into. If cooking with frozen prawn, it is important to make sure that they are completely defrosted. This can be done easily by placing the prawn in a waterproof package or wrapping in plastic wrap, and placing in cold water for about an hour. Once defrosted, prawns are ready to cook and should be used immediately. When cooking prawn, one thing to remember is that they cook fast. If using prawn in a stir fry dish, wait until the last minute to add prawn as they will cook in as little as 30 seconds. Other methods, such as breading and frying, prawn can cook in under a minute. Deciding on whether to cook with the head and shell on or without is a personal decision. If you choose to cook without the shell, you will find it is a little easier to remove if the prawn is still slightly frozen.

Sablefish has recently started turning heads and winning fans in high-end restaurants across the globe. This is a good thing, because, in addition to its delicious flavor, sablefish is an ocean-friendly seafood selection. Prized for its rich, buttery flesh, sablefish has become a popular sushi option and is increasingly featured in a variety of cuisines Sablefish gets its unique taste and texture from the high oil content which makes unsmoked product ideal for fast, high heat - especially grilling, roasting, broiling and pan-searing. When cooked, the flesh forms large, pure white flakes, making it suitable for Western style and Asian dishes. Depending on the cure, some chefs soak smoked sablefish in milk before finishing by grilling, baking or steaming, although this is not necessary for lightly smoked product. Smoked sablefish trimmings also make excellent dips, mousses and fillings. The high oil content of Sablefish makes it especially rich in Omega-3 fatty acids which many experts believe reduce the incidence of heart disease. Unsmoked sablefish is available as "J" cut (head off, collar off), fillets or steaks. Smoked sablefish is normally hot-smoked and requires additional cooking. It is available in sides and portions. Smoked and unsmoked collars are also available.
