Ingredients
Ravioli: 4 ½ cups of ravioli dough, 7 cups cepes, 7 ½ oz. onions, 5 ¼ oz. foie gras, 3 ½ oz. of truffles. Sauce with cream of alba: 33 oz. cream, 3 ½ oz. of truffles of alba (a mixture of truffles and cepes), salt, pepper, olive oil, 2 lbs. asparagus
Preparation Instructions
Prepare and clean the cepes, then slice. Clean then chop asparagus. Brown cepes in a frying pan, then add the the asparagus. Peel the onions, dice them, then brown. Fry the cepes. Cut the foie gras in ten pieces. For ravioli: Spread dough as thinly as possible. Cut circles of 4 inches in diameter. On every circle, spoon some of the cepes liquid and asparagus. Add a piece of foie gras, seasoned with salt and pepper. Fold up the ravioli in the shape of a crescent and brush with egg yolk. For sauce of alba: Brown and pour over ravioli.

Prepare and clean the ceps, before carving them in small gills. Clean then cut the asparagus, while keeping the tips of a 2 cm length for the decoration. Brown the ceps in the frying pan, with the remaining of the asparagus. Peel the onions, shred them, make them then compoter until obtaining of a brunette coloration. Fry the ceps. Cut the foie gras in ten pieces. Installation of the raviole: Spread the dough as finely as possible. Cut, with the help of a punch, of the circles of 10 cm of diameter. Arrange on every circle, a spoon to soup of the mixture ceps, let s anoint and asparagus. Put the piece of foie gras previously seasoned over. Draw the contour with a brush and the egg yolk. Fold the dough, in order to form a crescent moon. Sauce of alba: Put in a pan her cream-colored

My time was wasted doing this recipe, it tasted so weak. I don’t know what went wrong because I just did everything that was written in here. I won’t make this again!

Because of this recipe, I recently discovered that I’m allergic to mushrooms. I had a series of extreme itching all over my body and a bad stomach. I regret it that I made this recipe. I will never make any mushroom recipes from now on. Jeez.. my body is really itchy. :(

I think the food was great. What I don’t like about this, there are some parts in the video that was quite hard to understand. This should have a subtitle for a much easier understanding of words saying in the said video.

Foie gras is hard to come by where I am from, but that didn't stop me from making this recipe. I used duck liver pate as a substitute to foie gras, although the texture is different, there is not much difference in flavor.
