Ham Cheese and Potato Pancakes

Ingredients

1 ¼ lb. potatoes, peeled and cubed

2 tablespoons butter

¼ cup grated Cheddar cheese

4 slices ham, chopped

½ cup all purpose flour

Spray oil

Salt

Freshly ground pepper

Preparation Instructions

Fill a saucepan with salted water and bring to a boil. Add the potatoes and cook until tender, about 10 to 15 minutes. Drain. Mash, mixing in the butter and cheese until melted.

Add the ham and flour, stirring well. Season with salt and pepper.

Shape this “dough” into 8 discs about ½ in. thick.

Spray a skillet with oil and cook the potato pancakes for about 4 to 5 minutes on each side, or until golden. Drain on paper towels before serving.

Well written recipe for an old and common potato dish. It's just amazing how many things can be cooked with potatoes. The ham and cheese really complements this dish. Very good breakfast, brunch or side dish. The creamy goodness mixes well with the ground pepper.
