1 3/4 cup wheat flour

1/2 cup butter

1/2 teaspoon baking soda


3 tablespoon rice flour

2 2/5 cup clarified butter or any vegetable oil for the dough

Oil for frying

1 1/4 cup granulated sugar

1 3/5 cup water

Preparation Instructions

In a mixing bowl, make dough out of wheat flour, butter, baking soda and water. Roll out the dough into 8-10 balls and set aside.

In a separate bowl, mix rice flour and clarified butter to form a nice thin paste.

Make thin squares from each ball of the prepared dough and spread the rice flour paste over them. Fold the dough and cut into 4 rectangles of equal size. Stack the 4 rectangles on top of each other to make one piece of dough. Repeat for each dough ball.

Heat oil in a pan and fry dough pieces until golden brown. Drain the excess oil and set aside.

Make a syrup by mixing the sugar with 1 3/5 cup and bring to a boil, stirring constantly. Keep stirring and simmer for about 20 minutes or until the desired consistency is reached. Remove from heat.

Soak the fried Kakinada Khaja in this sugar syrup for about 5 minutes, drain the excess syrup and set aside; repeat with all the dough. Serve Kakinada Khaja in a pudding dish.
