1 cup all purpose flour
1/4 cup powdered milk
1 teaspoon baking powder
¼ teaspoon baking soda
½ teaspoon salt
¼ teaspoon ground nutmeg
¼ teaspoon ground cinnamon
1/3 cup shortening
1/3 cup brown sugar
½ cup molasses
1 egg
1 cup shredded carrots
1 teaspoon pure vanilla extract
½ cup raisins (optional)
1 ¾ cup oats
In a large mixing bowl, stir together the flour, powdered milk, baking powder, baking soda, salt, nutmeg, and cinnamon.
In the bowl of an electric mixer, cream the shortening, sugar, and molasses. Blend in the egg. Gradually stir in the flour mixture.
Stir in the carrots, vanilla, raisins (if using), and oats.
Drop by teaspoonfuls onto an ungreased cookie sheet. Bake for 10 to 12 minutes, or until golden.
