Ingredients
For the Snail Butter: 28 tablespoons softened butter, 2 tablespoons minced parsley, 1 ½ tablespoons chopped shallots, 1 ¾ tablespoons chopped garlic, 3 teaspoons salt, pepper
6 dozen snails, 3 ½ tablespoons butter, ¾ cup wine (Sylvaner), 3/4 cup veal fond (stock), salt, pepper
Preparation Instructions
To prepare the snail butter, mix all the ingredients well. Set aside. Melt the butter in a pan. Add the snails and sweat them until tender. Add wine and veal fond. Add salt and pepper. Boil for 5 minutes. Remove the snails and put them back in their shells, along with some of fluid used to cook them. Close the shells with the snail butter. Place the shells on a snail dish and cook in a 356 degrees F. oven for about 10 minutes.
