Ingredients
Risotto 1/2 cup raw arborio rice 1/3 cup raw pearl barley, roasted in oven until golden brown 1 tsp shallots finely chopped 1/2 tsp garlic, finely chopped 1/2 cup white wine 4 cups chicken stock 1 tbsp blanched, diced celery root 1 tbsp blanched, diced celery stalk 1 tbsp blanched, diced butternut squash Chocolate Cognac Sauce 1 cup demi glace 1 oz red wine 1 oz Cognac 1 tsp soya sauce 1 tbsp chocolate 1/4 tsp fresh tarragon 2 tbsp butter 1/2 tsp shallots finely chopped
Preparation Instructions
Risotto Sweat shallots and garlic in a sauce pot with a liberal amount of butter. Add the raw arborio rice and stir until rice is completely coated in melted butter. Add white wine and cook until absorbed. Add the raw toasted pearl barley. Stir until coated. Add the chicken stock one ladle at a time until it is all gone. The rice should be three quarters cooked. Remove from heat and cool by spreading out on a baking tray to quicken the cooling process. To finish for plating place cool risotto in a pan and add one or two ladles of chicken stock. Bring to a boil and add the blanched vegetables. Once the stock is absorbed and the risotto is hot all the way through, season to taste and place in the middle of the plate. Chocolate Cognac Sauce Saute shallots in the butter. Add chopped tarragon. Add the red wine and flame, reduce by half. Add the Cognac and flame, reduce by half. Add the demi glace and reduce by one third. Finish with the soya sauce and add chocolate. Once chocolate is melted and incorporated in to the sauce, pour on plate. Cornish Hen Season both sided of the two Cornish hen breasts with salt and pepper. Sear in a frying pan until golden brown on both sides and finish in the oven for five to six minutes at 375 degrees Fahrenheit. Remove and let rest for two minutes. Plating Place the risotto in the middle of the plate. Slice the Cornish hen breasts and arrange on top of the risotto. Drizzle sauce over top and around plate for decoration.

This is just to difficult, I had a hard time following the written instructions, the video is just as worse. I have wasted time and money on this one.

This kind of recipe is too extravagant! Pan roasted Cornish Hen is already enough to it...It doesn't need any extra ingredients to it! I think it is better to omit some of it.

I tried this because of the chocolate but by this I've learned that not everything with or on chocolate is delicious. I don't take the chocolate as a good blend for this…it just doesn't feel right.

One of the BEST risottos I’ve ever tried! Seriously! Well, the twist is obvious but the twang is something you’d be surprised with…the enjoyment you’d have from making this is also a fulfilling plus factor! My mom has GOT to try this (I’ll brag that I’m already good at cooking! haha)

Luscious! The butter-covered rice will really make you drool and it is just the first step of the dish! So better watch out if you tried this (just kidding)! The stock gave a little boost on the whole dish. But what’s surprising is that the cognac and chocolate mix really hit it off!
