Ingredients
4 red apples, 6 Granny Smith apples, 2 pints milk, 2 2/3 oz. cinnamon sticks, 1/3 lbs. sugar, 8 egg yolks, 1/2 lb. butter, 1 lemon
Preparation Instructions
Boil the milk and cinnamon sticks. Pour the egg yolks in a bowl. Add 1/4 lb. sugar. Beat until the egg yolks turn whitish. Add the boiling milk. Place the mixture in a saucepan and cook without boiling. Stir frequently with a wooden spatula until the cream begins sticking to the spatula, turning into “English cream.” Strain the English cream, removing the cinnamon. Place the cream in the freezer. Green apple sauce preparation: Cut two Granny Smith apples in quarters and remove the seeds. Cook them into a compote. Place them in a cutting machine. Strain. Store cold. Place the remaining Granny Smith apples in a centrifuge to recover their juice. Mix the juice in with the compote. If the sauce tastes acidic, add some lemon juice. Refrigerate. Cooking the red apples: Peel the apples, core and cut into quarters. Sauté with some butter and sugar. Finishing: Pour the green apple sauce over the serving dish and place the sautéed apple quarters on it. Lay a scoop of ice cream over the apples.

Roasted Apples with Green Apple Sauce and Cinnamon Ice-cream

Green Apple Sauce and Cinnamon Ice-cream make this roasted apple recipe a deliciously satisfying and healthy dessert! Eaten out of hand, crisp raw apples are one of the tastiest, healthiest snacks going, but when cooked they can also be the starting point for an easy low-calorie dessert. Our sophisticated yet simple roasted apple features Green Apple Sauce for a dose of protein and nutrition. If possible, use Red Rome or Cortland apples, considered the best choice for baking because they retain their shape, as well as their tart flavor, during baking.

Easy on the digestion, apples contain malic and tartaric acids that inhibit fermentation in the intestines. Their high fiber content adds bulk that aids the digestive process, making elimination natural and comfortable. Apples contain pectin, a soluble fiber that encourages the growth of beneficial bacteria in the digestive tract. Apples contain flavonoids, antioxidants that improve immune function and prevent heart disease and some cancers. Green apples act as a liver and gall bladder cleanser and may aid in softening gallstones. Because of their high water content, apples are cooling and moistening and aid in reducing fever. Simply grate them and serve them to feverish patients. Steamed apples sweetened with honey are beneficial for a dry cough and may help to remove mucous from the lungs. Unpeeled apples provide their most plentiful nutrients just under the skin. Apples are a good source of potassium, folic acid, and vitamin C. I really wasted my time and effort making this dessert, the taste was really awkward! Maybe it’s all because of the roasted apples and the mixtures are totally incorrect! Better to eat apple alone!

When i first tasted this, i said to myself i’ll never eat this again. But when my aunt made this, it was better than the first one. Well, tasting this the second time around is better. I should make this again also.
I don't think this will be good, because it takes what, 120 minutes in preparation ??? That is so long! Kindly revise your recipe! Make it shorter in preparation.

My two hours is wasted by this recipe! I did not like the weird taste. I don’t know if it is what it is supposed to taste like. I’d rather mix all these apples in a big bowl and add some milk and cinnamon.

This dessert recipe is a must try! The sweet aroma of the cinammon ice cream is perfect with the juicy apples. The color of the green apple sauce accentuated the sauted apples. It's a match made in heaven!

I’ve never tried roasting any fruits before but this made me experience how great it is. This made a very sweet dessert that I was able to make my kids finish their meals cleanly and fast the second time I was to serve this. As much as they enjoy eating it, I also enjoy doing this new found cooking greatness so it’s really beneficial to all of us. This could be rated “Mother’s choice”.

This is a really complicated way of preparing and enjoying apples, but it is all worth it when you are already savoring it. I never knew roasted apples taste so good, or maybe it is the sauce that makes it so. Anyway, this recipe is really good when it comes to the palate factor, quite healthy, too, for a dessert.

Easy dish that doesn’t need a lot of experience in the kitchen! It is now a dessert and a nutritious snack wrapped up in one dish! The sauce is fantastic, it makes you feel while eating those soft caramelized apples and drinking apple juice at the same time. And the apple as the main ingredient is a plus! With all its nutritious benefits, what more can you ask for?
