Ingredients
1 back of roebuck, ¼ lb. butter, salt, white ground pepper, 3/4 oz. bitter chocolate, 1 ¾ oz. semolina sugar, caraway, curry powder, 3 apples, 2 bay leaves, 1 carrot, 1 onion, 1/4 of leek, red wine
Preparation Instructions
Debone the fish. Season with salt and pepper. Add butter to a frying pan and preheat. Cook fish in the pan, remove, and place on a platter to rest. Add sugar and chocolate to the pan, followed by the carvi, curry, and wine. Bring to a boil and reduce. Peel and dice the apples. Add apples to the frying pan. Arrange apples on a platter. Slice fish into small pieces and arrange it on top of the apples. Top with sauce.
