2-3 tablespoons clarified butter or ghee
1 1/5 cups sooji or semolina or cream of wheat
4/5 cup water
A pinch of saffron soaked in 1 tsp milk
1/2 cup granulated sugar
½ tsp cardamom powder
2 tbsp nuts - cashews, almonds, pistachios finely chopped
In a deep pan heat clarified butter and add sooji. Cook on medium flame until golden brown, stirring continuously. Add water and stir to avoid lumps. Continue cooking mixture until it leaves the sides of the pan and comes together. Stir in saffron and sugar.
Remove from heat, stir in cardamom and nuts. Serve hot or warm.
Sajjige is a basically sooji halva and is made from cream of wheat or semolina. It hardly takes 15-20 minutes to make this Indian dessert.
