3 lbs. corned beef brisket
1 large onion, quartered
1 head of cabbage, cut into small wedges
1/2 tsp. coarse ground black pepper
2 tbsp. vinegar
2 tbsp. granulated sugar
1 cup water
Combine all ingredients in crock pot, with cabbage on top. Meat might have to be cut into smaller pieces to fit.
Cover and cook 12-14 hours on Low Heat or 6-7 hours on High Heat.
Slow-cooking this dish makes the meat melt-in-your-mouth tender with a tangy sauerkraut-like flavor.
