Ingredients
For the Soup: 1 onion, 1 shallot, 3 garlic cloves, 1 piece of pigskin, 1 laurel leaf, 1 lb. squash, chicken stock; For the Mushrooms: 1.76 oz. chanterelle mushrooms, 1.76 oz. cepe mushrooms, 1.76 oz. girolle mushrooms, 1.76 oz. trumpet of death mushrooms, olive oil, butter, 1 shallot, 1 clove garlic, minced; For the Gnocchi: 8.8 oz. ricotta cheese, 1 egg yolk, 1 tablespoon flour, salt, pepper, olive oil, Provençal herbs (dried savory, fennel, basil, and thyme)
Preparation Instructions
Soup preparation: Sweat the onion, shallot, and garlic in some butter. Mince the pigskin and mix it and a laurel leaf to the pan. Add the squash. Season and continue to sweat. Pour the chicken stock into the pan and cook for 25 minutes. Mushroom preparation: Clean and wash the mushrooms. Sauté in olive oil until they loose their water. Strain. Cook them in a pan with butter, shallot, and minced garlic. Gnocchi preparation: Mix the ricotta cheese, egg yolk, flour, salt, pepper, olive oil, and Provençal herbs. Cool for 15 minutes. Form two teaspoonfuls of gnocchi into balls or scoops. Place the scoops in boiling water. Once the gnocchi float on the surface they are done cooking. Stir the soup and strain it. Add a hazelnut-sized piece of butter and adjust the seasoning. Place the mushrooms in the middle of the dish and the gnocchi around them. Pour the soup over the whole.

I think there was too much liquid in the mushroom. My soup ended up bland. I couldn't even smell the herbs. Not my ideal soup.

Your recipe is interesting and it looks delicious. But as I gather all the ingredients, it seems it needs some revisions. Almost all of your ingredients are expensive and very hard to find.

Very nutritious and luscious appetizer. Not just because it has vegetables which is the main source of vitamins and minerals but of course it has cheese which is good source of calcium.
If I could give it 10 stars, I would! It is very deserving to earn a huge score from my family and that's because they really appreciated your recipe. Very delectable! This recipe sure is a keeper! It’s so quick and easy to follow. And that goat cheese really helped because im lactose intolerant but I had the chance to eat cheese. Thanks!

The preparation has a lot of difficulties and had troubles in making the soup, and I don’t know why. The dish looks simple but can’t get it right. Sorry but this dish didn’t work well for me…

I personally loved this recipe and my children LOVE this too. I will make it regularly to maintain their body healthy. I used about 9 small tender squash and peeled it, but did not seed it. It made enough soup for my family of 5 (including 2 teens) plus enough for me to eat for lunch the next day.

The first time I made this, I used shredded cheddar and my family and I LOVED it especially the soft dumplings that is made of cheese. Then I made it again using the goat cheese that the recipe calls for. My husband still liked it! I'm really glad I tried it with regular cheese first. I still gave this recipe 5 stars because it is SO good using cheese in dumplings and a very nutritious...my husband said he could eat it that way every day. It does need additional salt and a bit of pepper when not using the processed cheese, but it's well worth it!

As a mom I always prepare soup for my kids. And as I take a glimpse on this recipe I tried to make one for them. Squash and cheese together? At first, I had a doubt because the combination of the ingredients are fully loaded and I’m worried because they might not eat well because of the ingredients here are really heavy. But I was surprised, they love the combination of this soup and it boosts their appetite. They keep on telling me to do it over and over again. These became their favorite soup dish ever!
