Ingredients
1.8 lbs. salted cod fillet, 1 small fennel with roots, 1 cups rusty sauce, 2 tablespoon diced olives, 1 pint (2 cups) fish soup (poisson de roche), 4 royal prawns, 2 tablespoons diced tomato, some olive oil, 4 young stewed baby leeks, salt, pepper
Preparation Instructions
Desalt the cod under cold, running water for 48 hours. Prepare the garnishing: Dice the olives, tomatoes, and fennel and stew in olive oil. Blanch and sweat the baby leeks. Cut the cod fillets into long strips. Soak in the fish soup. Place the fish on 4 plates in the form of a star. Add the stewed leek, rolled in spirals, in the middle. Keep warm. Reduce the cod cooking liquid. Incorporate the liquid from the stewed fennel, tomatoes, and olives. Bring to a boil. Remove from heat and the rusty sauce. Adjust the seasoning. Cover the cod fillets with the sauce. Decorate with dill and a prawn tail.

Seems like a very interesting and I'm sure tasty as it sounds. However, can some ingredients be substituted with something else? The dish would be very nice for family affairs I'm sure.

Some of the ingredients included in this recipe are quite expensive and hard to find in the market. I got interested from its title on the video. But then when I was going to try it something is wrong... the ingredients!

Another great cod recipe from gourmandia. Although this recipe takes a lot of time to prepare and cook, I assure you that you won’t be disappointed. Trust me. I already tried this recipe 3 weeks ago while visiting my aunt back in Ontario. She told me she just had the best tasting cod in her life. And she’s 71!

There’s nothing much to say about this dish. It is easy to follow and easy to make as well. I enjoyed making it because there is no hassle, and the instructions have made every step clear. Decorating and the plating is pretty much just using the common sense and there’s more of decorating in this dish so I can say that making this dish will not make anyone have a hard time.

This dish maybe great but the preparation time takes too long for me, I have a restaurant and I am searching for great recipes. I think it is not suitable for fast dining restaurants with this recipe. Maybe I’ll try it next time for a family occasion.

This dish looked intriguing, so I tried it. It's fantastic! Every minute is worth of preparation – great dish! I also made this for my hubby when he was sick and he really enjoyed it. I followed the recipe exactly, but used red snapper instead of cod. We will definitely cook this again.

This dish is really “worth the wait”. It took me almost an hour for me to finish cooking this recipe. My family is all hungry that time so they got mad at me for letting them wait that long. But, when I served it, WOW! They were all pleased to have that dish on their plate. It was so tasty that we decided to put it on a daily diet meal plan.
