1 large onion, sliced
2 cup potatoes, pared and cubed
10 oz. package frozen whole kernel corn
1 cup hot water
1 1/2 cup chopped roasted turkey
1/2 cup celery, sliced
2 tbsp. butter or margarine
16 oz. can stewed tomatoes
10 1/2 oz. can condensed cream of chicken soup
2 oz. shredded Cheddar cheese
1/4 tsp. garlic powder
1/8 tsp. coarse ground pepper
Salt to taste
In a large skillet, over medium-high heat, cook onion slices until lightly browned. Add potato cubes, corn and water. Cover and cook 10-15 minutes or until potatoes are soft.
Reduce heat. Add the remaining ingredients. Simmer, stirring occasionally, for 45 minutes, or until flavors are well-blended.
This hearty stew is delicious and easy to make. Serve with a salad, and biscuits or dumplings for a well-rounded meal. For a tasty variation, substitute chicken for the turkey and/or lima beans for the corn. Low-fat soup and low-fat or fat-free cheese can be substituted for a healthier version of this dish.
