½ cup granulated sugar
½ cup firmly packed brown sugar
½ cup butter, softened
½ cup plain nonfat yogurt
1 ½ teaspoons pure vanilla extract
1 ¾ cup all purpose flour
½ teaspoon baking soda
½ teaspoon salt
½ cup chocolate chips
¾ cup old fashioned rolled oats
2 tablespoons ground coffee granules (optional)
Preheat the oven to 375 degrees F.
In a large bowl, stir together the granulated sugar, brown sugar, and butter, beating until fluffy. Add the yogurt and vanilla, stirring well to blend. Add the flour, baking soda, and salt, stirring until combined. Stir in the oatmeal. Fold in the chocolate chips and ground coffee, if using.
Drop this dough by rounded teaspoonfuls 2 inches apart on a cookie sheet. Bake for 8 to 12 min., or until golden. Cool 1 minute on the cookie sheet, then transfer to a wire rack to cool completely.
